Homemade gelato is an increasingly popular treat that can secure extra business for foodservice operators.

Now Taylor UK has launched the Taylor by Frigomat pasteuriser series, a range of automatic pasteurisers to make gelato. They provide operators with the capacity to incorporate a hot process to mix, heat hold, refrigerate and age gelato or another liquid mixture, in just one stylish stainless steel appliance. It provides quality control during the mixing process, ensuring a rich, creamy texture, and a consistent standard of end product. Speciality recipes can also be added to the menu, with slush bases, hot chocolate, syrup toppings and inverted sugars all possible. 

The three pasteuriser models have quick selection push buttons to control the three heat cycles. There are two automatic cycles, and a third, semi-automatic one. The machine carefully regulates the temperature and can automatically calculate the duration of pauses required for pasteurisation during the gelato making process.

The range also features a semi-automatic cooling and preservation cycle. The machine’s clear cover means that the mixing process is fully visible, and the bain-marie system ensures that the temperature is spread evenly throughout the tank.

Central to minimising unnecessary machine downtime is the IES (Intelligent Electronic System), which ensures the batch is always preserved at its ideal temperature.

An independent rinse hose helps maintain hygiene, while the stainless steel agitator and spout can be easily disassembled without tools for cleaning.

The Taylor by Frigomat range provides a selection of sizes to help gelato makers find the perfect fit for their operation. All three feature the option of a variable batch size. The smallest model, CH03, is able to produce up to 30L per two hour cycle and measures 1140mm tall by 400mm wide and 845mm deep. Its produce can be cooled by either air or water, and it can be powered by a 32 amp single phase or a three phase socket.
